Aim of the Sub-project:
The aim of the subproject is the development of a concept for traceability in the systematised food service industry that enables integrated, gapless traceability throughout the value chain.
Research:
Work package 1 is a literature review and analysis concentrating on the topics “traceability systems”, “logistics”, and “supply chain management”. In addition, the legal framework will be analysed.
Based on the results of this analysis, a questionnaire will be developed for the second work package, which will focus on the relevant subject areas and problems of traceability in the food service industry. Representatives of selected food service establishments will be interviewed in order to gain information regarding:
- Existing traceability systems
- Strategic direction of the industry
- Crisis management
- Performance (i.e. capability and limitations) of traceability systems in production and processing of meat products
- Expectations of/requirements for a global concept
By means of the results of this data analysis, an integrated, gapless traceability system will be developed, which will integrate all stages of the supply chain (or as many as possible), in order to provide a fast and reliable flow of information . The limited usability of isolated applications will be enhanced via interfaces.
Objectives for the development of the concept are:
- Compliance with the law and consumer requirements
- Development of improved concepts in order to guarantee food safety and adequate inspections
